Squash Casserole

<p>Use up all your summer squash in this fabulous cheesy side dish.</p>

Serves: 6-8 servings


Ingredients
7 Sliced Medium Size Yellow Squash
1/2 Cup Medium Onion, Chopped
1 Stick Butter
1 Sleeve Townhouse Crackers
2 Large Eggs, Beaten
8 Oz. Mild Shredded Cheddar Cheese

Step by Step Instructions
  1. Chop the summer squash with 1/2 cup medium onion. Place in a pot of boiling water with salt and pepper to taste. Boil squash until tender. Once tender, remove from stove and drain well. Add to a 9x13 baking dish.
  2. Add in eggs, cheese, and townhouse crackers.
  3. Bake in a 350* oven for about 40 minutes or until set in the middle and lightly browned on top.
